Ingredients

  • 2 tablespoons extra virgin olive oil
  • 10 cloves garlic cloves, minced
  • 1 medium yellow onion, finely chopped
  • 2 stalks celery stalks, diced
  • 1 medium carrot, diced
  • 3 cups cannellini beans (white beans), drained and rinsed
  • 4 cups low-sodium vegetable broth
  • 3 sprigs fresh thyme sprigs
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup heavy cream (optional)
  • 2 tablespoons fresh parsley, chopped
  • 0 crusty bread, for serving (optional)

Directions

Step 1

Heat a large pot over medium heat and add the olive oil.

Step 2

Add the minced garlic, onion, celery, and carrot to the pot. Sauté for 5–7 minutes, stirring frequently, until the vegetables are softened and fragrant.

Step 3

Stir in the cannellini beans, vegetable broth, thyme sprigs, bay leaf, salt, and black pepper. Bring the mixture to a gentle boil.

Step 4

Reduce the heat to low, cover the pot with a lid, and simmer the soup for 20 minutes to allow the flavors to meld.

Step 5

Remove the thyme sprigs and bay leaf from the pot. Use an immersion blender to puree the soup to your desired consistency (completely smooth or slightly chunky). If you don’t have an immersion blender, transfer the soup in batches to a countertop blender and return to the pot afterward.

Step 6

If using heavy cream, stir it in after blending and heat gently for 2–3 minutes.

Step 7

Taste the soup and adjust the seasoning with more salt and pepper if needed.

Step 8

Ladle the soup into bowls, garnish with fresh parsley, and serve with crusty bread if desired. Enjoy!
