Ingredients

  • 2 bulbs Garlic
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion
  • 1 large Carrot
  • 1 Celery stalk
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 4 cups Chicken or vegetable broth
  • 3 tablespoons Fresh lime juice
  • 1 Zest of lime
  • 2 tablespoons Fresh cilantro
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Tortilla strips

Directions

Step 1

Preheat the oven to 400°F (200°C).

Cut the tops off the garlic bulbs, drizzle each with 1 tablespoon of olive oil, and wrap them in foil. Roast in the oven for 30 minutes or until the cloves are soft and golden.

While the garlic roasts, finely chop the onion, carrot, and celery.

Heat the remaining olive oil in a large pot over medium heat. Add the onion, carrot, and celery, and sauté for 5-7 minutes until softened.
