Ingredients

  • 2 lbs Chicken thighs (bone-in, skin-on or skinless)
  • 4 cloves Garlic cloves, minced
  • 0.25 cup Lime juice (freshly squeezed)
  • 1 tbsp Lime zest
  • 2 tbsp Olive oil
  • 1 tbsp Honey
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Chicken broth (low-sodium)
  • 2 tbsp Fresh cilantro (optional, for garnish)

Directions

Step 1

Rinse and pat dry the chicken thighs with paper towels.

Step 2

In a small bowl, whisk together the minced garlic, lime juice, lime zest, olive oil, honey, ground cumin, paprika, dried oregano, salt, and black pepper to create a marinade.

Step 3

Place the chicken thighs in a large resealable bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes, or up to 8 hours for maximum flavor.

Step 4

At the end of the marinating time, transfer the chicken thighs to the crockpot, skin-side up if using skin-on chicken.

Step 5

Pour the remaining marinade from the bag or dish over the chicken, and add the chicken broth to the bottom of the crockpot.

Step 6

Cover the crockpot with the lid and cook on HIGH for 3-4 hours or on LOW for 6-7 hours, until the chicken is tender and the internal temperature reaches 165°F (74°C).

Step 7

Once cooked, carefully remove the chicken from the crockpot and transfer it to a serving platter.

Step 8

Optional: Garnish with freshly chopped cilantro before serving.

Step 9

Serve hot with side dishes like rice, mashed potatoes, or roasted vegetables.
