Ingredients

  • 6 whole Garlic cloves
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 8 ounces Spinach fettuccine
  • 8 ounces Regular fettuccine
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley (chopped)

Directions

Step 1

Peel the garlic cloves and mince them finely.

Step 2

In a large skillet, heat the butter and olive oil over medium heat until the butter is melted and begins to foam.

Step 3

Add the minced garlic to the skillet and sauté for 2-3 minutes until fragrant and golden, being careful not to burn it.

Step 4

Lower the heat slightly and pour in the heavy cream. Stir well to combine with the garlic and butter mixture.

Step 5

Simmer the cream mixture for 3-5 minutes, allowing it to thicken slightly. Stir in the grated Parmesan cheese and continue stirring until the cheese is melted and the sauce is smooth. Add salt and black pepper to taste.

Step 6

In a separate large pot, bring salted water to a boil. Cook the spinach fettuccine and regular fettuccine together according to package instructions (about 8-10 minutes) until al dente. Drain the pasta, reserving 1/2 cup of pasta water.

Step 7

Add the cooked pasta to the skillet with the sauce. Toss well to coat the noodles evenly in the sauce. If the sauce is too thick, add a few tablespoons of the reserved pasta water to adjust the consistency.

Step 8

Garnish the dish with freshly chopped parsley and an additional sprinkle of Parmesan cheese if desired.

Step 9

Serve immediately while hot and enjoy!
