Ingredients

  • 4 whole Artichokes
  • 1 whole Lemon
  • 3 tablespoons Olive oil
  • 4 whole Garlic cloves
  • 4 tablespoons Unsalted butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Preheat your grill to medium heat.

Step 2

Prepare the artichokes by cutting off the top inch of each artichoke and trimming the stem to 1-2 inches. Remove the tough outer leaves near the base and snip off any sharp or spiky tips from the remaining leaves.

Step 3

Slice each artichoke in half lengthwise. Use a spoon to scoop out the fuzzy choke from the center of each half.

Step 4

Rub the cut sides of the artichokes with the lemon to prevent browning and to add flavor.

Step 5

Place the artichoke halves in the boiling water and boil for 15-20 minutes, or until the stems are tender when pierced with a knife. Remove and drain well.

Step 6

While the artichokes are boiling, prepare the garlic butter by finely mincing the garlic cloves and melting the butter in a small saucepan over medium heat. Add the minced garlic and cook until fragrant, about 2 minutes. Remove from heat and stir in olive oil, salt, and pepper.

Step 7

Brush the cut sides of the boiled artichokes generously with the garlic butter mixture.

Step 8

Place the artichokes cut-side down on the preheated grill. Grill for 5-7 minutes, or until there are deep grill marks. Flip and grill the rounded side for another 3-4 minutes.

Step 9

Remove the artichokes from the grill and brush with any remaining garlic butter. Garnish with fresh chopped parsley if desired. Serve warm.
