Ingredients

  • 400 g Spaghetti
  • 2 heads Garlic cloves, whole for roasting
  • 6 cloves Garlic cloves, minced
  • 6 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 100 ml Heavy cream
  • 50 g Parmesan cheese, grated
  • 2 tbsp Parsley, freshly chopped (optional)
  • 1 tsp Salt
  • 0.5 tsp Black pepper, freshly ground
  • 0.5 tsp Red chili flakes (optional)

Directions

Step 1

Preheat your oven to 200°C (390°F). Slice off the top of the garlic heads, exposing the cloves, and drizzle them with 1 tablespoon of olive oil. Wrap the garlic heads in aluminum foil and roast for 25-30 minutes until soft and golden.

Step 2

While the garlic is roasting, bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water before draining the spaghetti.

Step 3

Once the roasted garlic is done, let it cool slightly. Squeeze the soft garlic cloves from their skins into a small bowl and mash them with a fork into a paste.

In a large skillet or sauté pan, heat 4 tablespoons of olive oil and 2 tablespoons of unsalted butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
