Ingredients

  • 4 pieces chicken breasts (boneless, skinless)
  • 2 tablespoons olive oil
  • 3 pieces garlic cloves (minced)
  • 3 tablespoons fresh dill (chopped)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper (freshly ground)
  • 0.5 cup chicken stock (low-sodium)
  • 1 tablespoon unsalted butter

Directions

Step 1

Pat the chicken breasts dry with paper towels. Season both sides with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 4-5 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside on a plate.

Step 3

Reduce the heat to medium and add the remaining tablespoon of olive oil to the skillet. Stir in the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 4

Add the chicken stock and lemon juice to the skillet, scraping the bottom of the pan to deglaze and release any browned bits.

Step 5

Return the chicken breasts to the skillet, cover, and reduce the heat to medium-low. Simmer for 15-20 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

Step 6

Once the chicken is cooked, remove it from the skillet and place it on a serving platter. Stir the unsalted butter and chopped dill into the pan sauce and let it simmer for 1-2 minutes.

Step 7

Taste the sauce and adjust seasoning with additional salt or pepper if needed.

Step 8

Pour the garlic dill sauce over the chicken breasts and serve immediately. Garnish with additional fresh dill if desired.
