Ingredients

  • 500 grams Fresh spinach
  • 2 tablespoons Butter
  • 3 units Garlic cloves
  • 1 tablespoon All-purpose flour
  • 1 cup Whole milk
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 0.25 teaspoons Nutmeg (optional)
  • 0 to taste Salt
  • 0 to taste Ground black pepper

Directions

Step 1

Wash the spinach thoroughly under cold water to remove any dirt or grit. Drain well.

Step 2

In a large skillet or pot, melt 1 tablespoon of butter over medium heat. Add the spinach in batches, stirring until wilted. Remove the cooked spinach to a colander and allow it to cool slightly. Squeeze out excess moisture and roughly chop the spinach. Set aside.

Step 3

Mince the garlic cloves finely.

Step 4

In the same skillet, melt the remaining 1 tablespoon of butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn the garlic.

Step 5

Sprinkle the flour into the skillet and whisk continuously for 1 minute to form a roux. This helps thicken the sauce.

Step 6

Slowly add the milk and heavy cream, whisking constantly to eliminate any lumps. Cook the mixture for 2-3 minutes until it starts to thicken.

Step 7

Stir in the grated Parmesan cheese and nutmeg (if using), and continue to cook until the cheese is melted and the sauce is smooth.

Step 8

Add the chopped spinach back into the skillet and stir well to coat it in the creamy sauce. Season with salt and black pepper to taste.

Step 9

Let the creamed spinach cook for 2-3 minutes over low heat, stirring occasionally, until heated through.

Step 10

Serve hot as a side dish and enjoy!
