Ingredients

  • 2 cups Fresh cilantro
  • 4 pieces Garlic cloves
  • 3 medium-sized Roma tomatoes
  • 1 piece Jalapeño pepper
  • 0.5 medium-sized Red onion
  • 2 tablespoons Lime juice
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.5 teaspoon Sugar (optional)

Directions

Step 1

Rinse the cilantro thoroughly under cold water and pat dry with a clean kitchen towel. Roughly chop the leaves and tender stems.

Step 2

Peel the garlic cloves and set them aside.

Step 3

Dice the Roma tomatoes into small chunks. For a smoother salsa, you can remove the seeds if desired.

Step 4

Slice the jalapeño pepper lengthwise. Remove the seeds and membrane for less heat or leave them in for a spicier flavor. Dice the pepper finely.

Step 5

Peel and finely dice half of a medium-sized red onion.

Step 6

Add the chopped cilantro, garlic cloves, tomatoes, jalapeño pepper, red onion, lime juice, olive oil, salt, black pepper, and sugar (if using) into a food processor or blender.

Step 7

Pulse the mixture several times until the salsa reaches your desired consistency. For a chunkier texture, avoid over-blending.

Step 8

Taste and adjust seasoning as needed, adding more salt, lime juice, or sugar to balance the flavors.

Step 9

Transfer the garlic cilantro salsa to a serving bowl and let it sit for 5-10 minutes to allow the flavors to meld together.

Step 10

Serve immediately with tortilla chips, or use as a topping for your favorite dishes. Refrigerate any leftovers in an airtight container for up to 3 days.
