Ingredients

  • 1 lb Ground beef
  • 4 Garlic cloves, minced
  • 2 Red chili, finely chopped
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 8 Flour tortillas
  • 2 cups Shredded cheddar cheese
  • 2 cups Enchilada sauce
  • 2 tbsp Olive oil
  • 2 tbsp Chopped fresh cilantro (optional, for garnish)
  • 1 tbsp Sliced jalapeños (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and chopped red chili to the skillet. Cook for 1-2 minutes until fragrant.

Step 4

Add the ground beef to the skillet. Break it up with a wooden spoon and cook until browned, about 7-8 minutes.

Step 5

Stir in cumin, smoked paprika, salt, and black pepper. Mix until the beef is evenly coated with the spices.

Step 6

Remove the skillet from heat and allow the beef mixture to cool slightly.

Step 7

Spread 1/2 cup of enchilada sauce to coat the bottom of a 9x13-inch baking dish.

Step 8

Lay one flour tortilla flat on a clean surface. Spoon about 1/3 cup of the beef mixture into the center. Sprinkle a small amount of shredded cheese over the beef if desired.

Step 9

Roll the tortilla tightly and place seam-side down in the prepared baking dish. Repeat with the remaining tortillas, beef mixture, and cheese.

Step 10

Pour the remaining enchilada sauce evenly over the rolled tortillas, ensuring they are fully covered.

Step 11

Sprinkle the shredded cheddar cheese evenly over the top.

Step 12

Place the baking dish in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly.

Step 13

Remove from the oven and let cool for 5 minutes.

Step 14

Garnish with fresh cilantro and sliced jalapeños, if desired, before serving.
