Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 3 tbsp Soy sauce
  • 2 tsp Cornstarch
  • 4 Garlic cloves, minced
  • 2 tbsp Vegetable oil
  • 2 cups Broccoli florets
  • 1 Red bell pepper, sliced
  • 1 Carrot, julienned
  • 2 tbsp Oyster sauce
  • 1 cup Chicken broth
  • 1 tsp Sesame oil
  • 0.25 tsp Salt
  • 0.25 tsp Ground black pepper
  • 4 cups Cooked white or brown rice (for serving, optional)

Directions

Step 1

Slice the chicken breasts into thin strips, about 1/4 inch thick. Place the chicken in a bowl and add 2 tablespoons of soy sauce and cornstarch. Mix well to coat and let it marinate for 10 minutes while preparing the vegetables.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and stir fry for about 5-6 minutes until fully cooked and lightly browned. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and stir for about 30 seconds until fragrant.

Add the broccoli florets, sliced red bell pepper, and julienned carrot to the skillet. Stir fry the vegetables for 4-5 minutes until they are tender-crisp.

In a small bowl, whisk together the remaining 1 tablespoon of soy sauce, oyster sauce, chicken broth, sesame oil, salt, and black pepper.

Pour the sauce over the chicken and vegetables in the skillet. Stir well and allow the stir fry to simmer for 2-3 minutes, letting the sauce thicken slightly.

Remove from heat and serve immediately over cooked white or brown rice if desired.
