Ingredients

  • 400 g spaghetti
  • 80 ml extra virgin olive oil
  • 6 individual garlic cloves
  • 1 tsp red chili flakes
  • 1 tbsp salt
  • 2 tbsp parsley (fresh, chopped)
  • 30 g parmesan cheese (optional, grated)

Directions

Step 1

Bring a large pot of water to a boil. Add 1 tablespoon of salt to the water and cook the spaghetti according to the package instructions until al dente.

Step 2

While the pasta is cooking, peel and thinly slice the garlic cloves.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until it turns golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic.

Add the red chili flakes to the skillet and stir for 30 seconds to combine with the oil and garlic.

Once the spaghetti is cooked, reserve 1 cup of the pasta cooking water and then drain the pasta.
