  • 4 Tilapia fillets
  • 1.5 cups Cherry tomatoes
  • 1 medium Zucchini
  • 1 medium Red bell pepper
  • 3 cloves Garlic
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Fresh thyme leaves
  • 3 tablespoons Olive oil
  • 1 large Lemon
  • 0.75 teaspoons Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

Step 2

Rinse the tilapia fillets under cold water and pat them dry with paper towels. Set aside.

Step 3

On a cutting board, halve the cherry tomatoes and dice the zucchini and red bell pepper into small, uniform pieces. Mince the garlic and chop the parsley.

In a large mixing bowl, combine the cherry tomatoes, zucchini, red bell pepper, minced garlic, 2 tablespoons of olive oil, fresh thyme, 0.5 teaspoons of salt, and 0.25 teaspoons of black pepper. Toss until the vegetables are evenly coated.
