Ingredients

  • 12 oz spaghetti
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 1 medium zucchini, diced
  • 1 medium yellow bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups spinach, fresh
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried oregano
  • 0.25 tsp crushed red pepper flakes
  • 0.25 cup parmesan cheese, grated (optional)
  • 0.25 cup basil leaves, fresh, for garnish

Directions

Step 1

Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente, about 9–11 minutes. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

Step 2

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Step 3

Add cherry tomatoes, zucchini, yellow bell pepper, and mushrooms to the skillet. Cook, stirring occasionally, until the vegetables start to soften, about 5–7 minutes.

Step 4

Season the vegetables with salt, black pepper, dried oregano, and crushed red pepper flakes. Stir to combine.

Step 5

Add fresh spinach to the skillet and cook until wilted, about 1–2 minutes.

Step 6

Add the cooked spaghetti to the skillet, tossing to combine with the vegetables. If the mixture seems too dry, gradually add reserved pasta water, 1/4 cup at a time, until the desired consistency is reached.

Step 7

Taste and adjust seasoning if necessary.

Step 8

Plate the Garden Spaghetti and sprinkle with grated parmesan cheese if desired. Garnish with fresh basil leaves.

Step 9

Serve immediately and enjoy!
