Ingredients

  • 200 grams Yellow wax beans
  • 1 cup Chickpeas (canned, rinsed and drained)
  • 1 cup Cherry tomatoes (halved)
  • 0.5 cup Red onion (thinly sliced)
  • 0.25 cup Fresh parsley (chopped)
  • 0.25 cup Extra virgin olive oil
  • 3 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 1 clove Garlic (minced)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper (freshly ground)

Directions

Step 1

Bring a medium pot of water to a boil and prepare a large bowl with ice water for blanching.

Step 2

Trim the ends of the green beans and yellow wax beans, then cut them into bite-sized pieces (about 2 inches).

Blanch the green beans and yellow wax beans in the boiling water for 2-3 minutes until crisp-tender, then immediately transfer them to the ice water to cool. Drain and set aside.
