Ingredients

  • 500 grams Carrots
  • 500 milliliters Whole milk
  • 100 grams Sugar
  • 3 tablespoons Ghee (clarified butter)
  • 0.5 teaspoons Cardamom powder
  • 2 tablespoons Cashews
  • 2 tablespoons Almonds
  • 1 tablespoons Pistachios
  • 2 tablespoons Raisins

Directions

Step 1

Wash, peel, and grate the carrots finely. Set them aside.

Step 2

In a heavy-bottomed pan, heat 2 tablespoons of ghee on medium heat. Add the cashews, almonds, and pistachios. Roast them for 1-2 minutes or until golden brown. Remove and set aside.

Step 3

In the same pan, add the grated carrots and sauté them in the remaining ghee for 5-7 minutes, stirring often, until they slightly soften and release a sweet aroma.

Step 4

Pour in the whole milk and stir well. Bring the mixture to a boil, then reduce the heat to low. Cook the mixture uncovered, stirring occasionally to prevent sticking, until the milk is fully absorbed by the carrots. This process will take approximately 25-30 minutes.

Once the milk has evaporated, add the sugar and mix well. The sugar will release some moisture, so continue cooking and stirring until the halwa thickens again.

Step 6

Add the cardamom powder and mix thoroughly. At this stage, you can also add an additional tablespoon of ghee for a richer flavor.

Stir in the roasted nuts and raisins, mixing them evenly into the halwa.

Turn off the heat and let the halwa cool slightly before serving.
