Ingredients

  • 500 grams Fresh fava beans
  • 3 tablespoons Olive oil
  • 3 units Garlic cloves
  • 1 unit Lemon
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 liters Water
  • 10 units Ice cubes

Directions

Step 1

Bring 1 liter of water to a boil in a medium-sized pot.

Step 2

While the water is heating, shell the fava beans by removing them from the pods.

Step 3

Add the shelled fava beans to the boiling water and blanch them for 2 minutes. This will help make the skins easier to remove.

Step 4

Prepare a bowl of ice water. After blanching, transfer the beans immediately to the ice water using a slotted spoon to stop the cooking process.

Step 5

Peel the outer skins off the fava beans by gently pinching each bean until the inner, bright green bean pops out. Discard the skins.

Step 6

Heat 3 tablespoons of olive oil in a large skillet over medium heat.

Mince the garlic cloves and add them to the skillet. Sauté for 1-2 minutes, stirring frequently, until fragrant but not browned.

Add the peeled fava beans to the skillet. Stir to coat them in the garlic and olive oil, and cook for about 3-4 minutes until tender.

Zest the lemon and set the zest aside. Then cut the lemon in half and squeeze the juice of half the lemon into the skillet. Stir well.
