Ingredients

  • 350 g fusilli pasta
  • 200 g fresh spinach
  • 250 g ricotta cheese
  • 50 g Parmesan cheese
  • 2 tbsp olive oil
  • 2 pieces garlic cloves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp nutmeg (optional)
  • 120 ml pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil over high heat. Cook the fusilli according to the package instructions until al dente. Reserve 120 ml of the pasta water, then drain the rest and set the pasta aside.

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Step 3

Peel and finely chop the garlic cloves. Add the garlic to the skillet and sauté for 1–2 minutes until fragrant but not browned.

Add the fresh spinach to the skillet, stirring frequently until the spinach wilts, about 3–4 minutes. Season with a pinch of salt and black pepper.

Reduce the heat to low. Add the ricotta cheese to the skillet, stirring to combine. Gradually pour in the reserved pasta water until the mixture becomes creamy and smooth. Add the nutmeg if desired.
