Ingredients

  • 12 oz fusilli pasta
  • 1 lb shrimp (peeled and deveined)
  • 1 cup frozen peas
  • 4 cloves garlic (minced)
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 lemon (juiced and zested)
  • 0.5 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley (chopped)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup grated Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp in a single layer and season with salt and black pepper. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil and the butter. Once the butter melts, add the minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes, or until fragrant.
