Ingredients

  • 400 g fusilli pasta
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 medium white onion, finely chopped
  • 3 garlic cloves, minced
  • 200 g button mushrooms, sliced
  • 400 g crushed tomatoes (canned)
  • 150 ml heavy cream
  • 0.5 tsp red chili flakes
  • 1 tsp dried oregano
  • 50 g Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fusilli pasta according to the package instructions until al dente. Drain the pasta, reserving 1 cup of pasta water, and set aside.

Step 2

Heat the olive oil and butter over medium heat in a large skillet or saucepan. Add the finely chopped onion and sauté for 3-4 minutes, or until soft and translucent.

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Add the sliced mushrooms to the skillet and sauté for 5-6 minutes, until they release their moisture and are golden brown.
