Ingredients

  • 3 cups All-purpose flour
  • 2.5 cups Granulated sugar
  • 1.5 cups Unsalted butter, softened
  • 5 large Eggs
  • 1.5 cups Whole milk
  • 2.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 3 tablespoons Cocoa powder
  • 0.5 cups Strawberry puree
  • 2 teaspoons Vanilla extract
  • 2 drops Pink food coloring
  • 2 cups Heavy cream (for frosting)
  • 1.5 cups Powdered sugar (for frosting)
  • 1 teaspoon Vanilla extract (for frosting)
  • 0.5 cups Sprinkles (optional, for decoration)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease three 8-inch round cake pans. Line them with parchment paper for easy removal.

Step 2

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 3

Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Step 4

In a separate bowl, whisk together the flour, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, alternating with milk, beginning and ending with the dry mixture. Mix until just combined.

Step 6

Divide the batter evenly into three separate bowls.

Step 7

In the first bowl, stir in the cocoa powder to create the chocolate layer.

Step 8

In the second bowl, stir in the strawberry puree and pink food coloring to create the strawberry layer.

Step 9

Leave the third bowl plain for the vanilla layer.

Step 10

Pour each batter into its own prepared cake pan and smooth the tops with a spatula.

Step 11

Bake the cakes in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Step 12

Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

Step 13

While the cakes cool, prepare the frosting by whipping the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.

Step 14

Once the cakes are completely cool, assemble by placing the chocolate layer on a serving plate or cake stand. Spread an even layer of frosting on top.

Step 15

Place the vanilla layer on top of the chocolate layer and spread another layer of frosting.

Step 16

Add the strawberry layer on top and frost the entire outside of the cake, smoothing it with an offset spatula.

Step 17

Decorate the cake with sprinkles as desired.

Step 18

Chill the cake in the refrigerator for at least 30 minutes before serving for cleaner slices. Enjoy!
