Ingredients

  • 115 grams unsalted butter
  • 150 grams granulated sugar
  • 100 grams light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 190 grams all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 120 grams Fruity Pebbles cereal
  • 100 grams white chocolate chips

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream the unsalted butter, granulated sugar, and light brown sugar together until the mixture is light and fluffy, about 2-3 minutes.

Step 3

Add the egg and vanilla extract to the butter mixture and mix well until fully combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

Step 6

Gently fold in the Fruity Pebbles cereal and white chocolate chips, being careful not to crush the cereal too much.

Step 7

Using a tablespoon or cookie scoop, portion out the dough onto the prepared baking sheets, spacing the cookies about 2 inches apart.

Step 8

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set and slightly golden. The centers may look slightly underbaked, but they will continue to set as they cool.

Step 9

Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve and enjoy! Store any leftovers in an airtight container for up to 5 days.
