Ingredients

  • 1 cup Dried figs
  • 1 cup Dried apricots
  • 0.5 cup Almonds
  • 0.5 cup Chopped walnuts
  • 2 tablespoons Unsweetened cocoa powder
  • 2 tablespoons Honey
  • 1 teaspoon Vanilla extract
  • 0.5 cup Desiccated coconut (optional, for rolling)

Directions

Step 1

Add the dried figs and apricots to a food processor. Blend until the mixture becomes paste-like and starts clumping together.

Step 2

Add the almonds, walnuts, cocoa powder, honey, and vanilla extract to the food processor. Blend again until the mixture is fully combined and forms a sticky dough. If needed, scrape down the sides of the food processor to ensure everything is mixed evenly.

Step 3

Scoop out about a tablespoon-sized portion of the mixture and roll it into a small ball using your hands. Repeat with the rest of the mixture to form approximately 12 truffles.

Step 4

Optional: Pour the desiccated coconut into a shallow bowl and roll each truffle in the coconut until lightly coated.

Step 5

Place the truffles on a plate or tray and refrigerate them for at least 30 minutes to firm them up.

Step 6

Serve chilled and store leftovers in an airtight container in the refrigerator for up to one week.
