Ingredients

  • 500 ml Milk
  • 3 tbsp Vanilla custard powder
  • 4 tbsp Granulated sugar
  • 1 medium (chopped) Apple
  • 1 medium (sliced) Banana
  • 100 grams (sliced) Strawberries
  • 100 grams (halved) Seedless grapes
  • 1 tsp Gelatin or agar-agar
  • 2 tbsp (for gelatin/agar-agar) Water
  • 100 ml Whipping cream
  • 2 tbsp (optional, for topping) Chopped nuts (e.g., almonds, pistachios)

Directions

Step 1

In a small bowl, dissolve the gelatin or agar-agar in 2 tablespoons of warm water. Let it sit for 5 minutes.

Step 2

In a medium-sized saucepan, bring the milk to a gentle boil over medium heat.

Step 3

In a separate bowl, mix the vanilla custard powder with 3 tablespoons of cold milk to create a smooth paste.

Step 4

Once the milk is boiling, reduce the heat to low and stir in the custard paste. Keep stirring continuously to prevent lumps.

Step 5

Add sugar to the mixture and continue to stir until the custard thickens. This should take about 3-5 minutes.

Step 6

Remove the custard from the heat and allow it to cool to room temperature.

Step 7

Meanwhile, gently heat the dissolved gelatin mixture until it dissolves completely, but do not let it boil. Stir this into the cooled custard.

Step 8

Once the custard has slightly thickened but is still pourable, fold in the fresh fruits (apple, banana, strawberries, and grapes). Mix gently to coat the fruits evenly.

Step 9

In a separate bowl, whip the cream until soft peaks form. Gently fold the whipped cream into the fruit-custard mixture for added creaminess.

Step 10

Pour the fruit pudding mixture into a serving dish or individual dessert cups.

Step 11

Chill in the refrigerator for at least 2-3 hours, or until set.

Step 12

Before serving, garnish with chopped nuts (optional) for added crunch and flavor.
