Ingredients

  • 2 cups Mixed berries (e.g., strawberries, blueberries, raspberries)
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Fresh lemon juice
  • 2 tablespoons Water
  • 0.5 teaspoons Vanilla extract (optional)

Directions

Step 1

Rinse the mixed berries thoroughly if using fresh fruit. If using frozen berries, no need to thaw.

Step 2

In a medium saucepan, combine the berries, granulated sugar, lemon juice, and water.

Step 3

Place the saucepan over medium heat and stir gently to combine the ingredients.

Step 4

Bring the mixture to a simmer, stirring occasionally. Let it cook for 8-10 minutes or until the fruit begins to soften and release its juices.

Step 5

Using the back of a spoon, gently mash some of the fruit to create a thicker texture while leaving some pieces whole for added texture.

Step 6

If desired, stir in the vanilla extract during the last minute of cooking for additional flavor.

Step 7

Remove the compote from the heat and let it cool slightly. It will thicken as it cools.

Step 8

Serve warm or chilled as a topping for pancakes, yogurt, ice cream, or as a filling for pastries.
