Ingredients

  • 1 cup Rolled oats
  • 1 cup Milk
  • 1 cup All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.5 cup Brown sugar
  • 0.25 cup Vegetable oil
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 cup Chopped fresh fruit (e.g., apples, bananas, or berries)
  • 0.5 cup Chopped nuts or raisins (optional)

Directions

Step 1

Preheat the oven to 375°F (190°C) and grease a 12-cup muffin tin or line it with paper liners.

Step 2

In a medium bowl, combine the rolled oats and milk. Let the mixture sit for 10 minutes to soften the oats.

Step 3

In a large bowl, whisk together the flour, baking powder, ground cinnamon, and salt.

Step 4

Stir the brown sugar, vegetable oil, egg, and vanilla extract into the oat and milk mixture until well combined.

Step 5

Pour the wet mixture into the dry ingredients and gently mix until just combined. Do not overmix.

Step 6

Fold in the chopped fresh fruit and optional nuts or raisins if using.

Step 7

Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm or store in an airtight container at room temperature for up to 3 days.
