Ingredients

  • 4 cups mixed greens (spinach, arugula, or lettuce)
  • 1 medium apple (any variety, sliced)
  • 1 cup strawberries (hulled and halved)
  • 0.5 cup blueberries
  • 0.5 cup grapes (seedless, halved)
  • 1 medium orange (peeled and segmented)
  • 0.25 cup almonds (sliced or slivered)
  • 0.25 cup walnuts (roughly chopped)
  • 0.25 cup feta cheese (optional, crumbled)
  • 1 tablespoon honey
  • 1 tablespoon lemon juice (freshly squeezed)
  • 2 tablespoons olive oil
  • 0.25 teaspoon salt
  • 0.125 teaspoon pepper

Directions

Step 1

Wash and dry the mixed greens thoroughly. Place them in a large salad bowl.

Step 2

Slice the apple into thin wedges. Hull and halve the strawberries. Halve the seedless grapes. Peel and segment the orange. Add all the prepared fruits, along with the blueberries, to the bowl with the mixed greens.

Step 3

Toast the almonds and walnuts in a dry skillet over medium heat for 2-3 minutes, stirring frequently, until they are golden brown and fragrant. Let them cool before adding them to the salad.

Step 4

If desired, crumble the feta cheese and sprinkle it over the salad.

Step 5

In a small bowl or jar, whisk together the honey, lemon juice, olive oil, salt, and pepper until well combined.

Step 6

Drizzle the honey-citrus dressing evenly over the salad just before serving.

Step 7

Toss the salad gently to ensure the dressing is distributed evenly. Serve immediately and enjoy!
