Ingredients

  • 16 oz Cheese tortellini (fresh or frozen)
  • 2 tbsp Olive oil
  • 3 cloves Garlic (minced)
  • 1 medium Zucchini (sliced into half-moons)
  • 1.5 cups Cherry tomatoes (halved)
  • 1 cup Broccoli florets
  • 2 cups Spinach (fresh)
  • 1 tbsp Lemon juice
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 cup Parmesan cheese (grated, optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to the package instructions until al dente. Drain and set aside.

Step 2

While the tortellini cooks, heat olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 4

Add the zucchini slices, broccoli florets, and cherry tomatoes to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.

Step 5

Stir in the fresh spinach and let it wilt, about 1-2 minutes.

Step 6

Add the cooked tortellini to the skillet and toss gently to combine with the vegetables.

Step 7

Drizzle the lemon juice over the dish, and season with salt and black pepper. Toss again to distribute the seasoning evenly.

Step 8

Remove from heat and serve warm. Sprinkle with grated Parmesan cheese, if desired, for extra flavor.
