Ingredients

  • 1 cup Semi-sweet chocolate chips
  • 2 tablespoons Coconut oil
  • 1 cup Creamy peanut butter
  • 1 tablespoon Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Whipped topping (thawed)

Directions

Step 1

Place 12 mini cupcake liners in a muffin tin to create the molds for the peanut butter cups.

Step 2

In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-second intervals, stirring in between until the mixture is smooth and glossy.

Step 3

Spoon about 1 teaspoon of the melted chocolate mixture into each cupcake liner. Use the back of the spoon to spread the chocolate evenly over the bottom of the liner. Place the tin in the freezer for 5-10 minutes, or until the chocolate is set.
