  • 1 cup whole milk

Directions

Step 1

In a medium saucepan, combine the heavy cream, whole milk, and 1/2 cup of the granulated sugar. Heat over medium heat, stirring occasionally, until the mixture is warm but not boiling (about 170°F or 75°C). Remove from heat.

In a separate large mixing bowl, whisk together the egg yolks, the remaining 1/4 cup of granulated sugar, and the salt until the mixture is pale and thick.

Slowly pour the warm cream mixture into the egg yolk mixture, a little at a time, whisking constantly to temper the eggs and prevent curdling.
