  • 4 large Egg yolks
  • 100 grams Granulated sugar
  • 60 milliliters Amaretto liqueur

  • 240 milliliters Heavy cream
  • 20 grams Almonds, finely chopped
  • 10 grams Powdered sugar (for garnish)

Directions

Step 1

Prepare 4 ramekins by wrapping a strip of parchment paper around the outside of each, extending 2-3 centimeters above the rim. Secure the paper with tape or kitchen string to create a collar. This will help the soufflé rise above the edge of the ramekins. Place the prepared ramekins in the freezer to chill while you prepare the mixture.

In a heatproof bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick, about 2-3 minutes.
