Ingredients

  • 2.5 cups all-purpose flour
  • 2 cups granulated sugar
  • 2.5 teaspoons baking powder
  • 0.5 teaspoons salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1.5 teaspoons vanilla extract
  • 1.25 cups whole milk
  • 2 cups heavy whipping cream
  • 0.5 cups powdered sugar
  • 1 cup fresh raspberries
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, sliced
  • 0.5 cup white chocolate shavings (optional, for garnish)
  • 0.25 cups powdered sugar, for dusting

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.

Step 2

In a large mixing bowl, sift together the all-purpose flour, granulated sugar, baking powder, and salt.

Step 3

Add the softened butter, eggs, vanilla extract, and milk to the dry ingredients. Mix with a hand mixer or stand mixer on medium speed until smooth and well combined, about 2-3 minutes.

Step 4

Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

Step 5

Bake the cakes for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a cooling rack to cool completely.

Step 6

To make the frosting, beat the heavy whipping cream and powdered sugar in a large mixing bowl on high speed until stiff peaks form, about 3-4 minutes.

Step 7

Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of whipped cream frosting over the top.

Step 8

Layer the fresh raspberries, blueberries, and sliced strawberries evenly over the frosting.

Step 9

Place the second cake layer on top and spread whipped cream frosting over the top and sides of the entire cake.

Step 10

Decorate the cake with additional fresh berries, white chocolate shavings (if using), and a light dusting of powdered sugar to achieve a frosty snow-like effect.

Step 11

Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld and the frosting to set.

Step 12

Slice and serve chilled. Enjoy your Frosty Snow Berry Cake!
