Ingredients

  • 170 grams unsalted butter, softened
  • 200 grams granulated sugar
  • 1 unit large egg
  • 1 teaspoon pure vanilla extract
  • 240 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 2 tablespoons heavy cream
  • 180 grams powdered sugar
  • 60 grams unsalted butter, softened (for frosting)
  • 0.5 teaspoon pure vanilla extract (for frosting)
  • 1 tablespoon milk (for frosting)
  • 0 as needed food coloring (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F). Line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.

Step 3

Add the egg and vanilla extract to the mixture and beat until well combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing slowly until a dough forms. Then, stir in the heavy cream to make the dough soft and pliable.

Step 6

Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Avoid overbaking to keep the cookies soft.

Step 8

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

While the cookies cool, prepare the frosting: In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar, then mix in the milk and vanilla extract until smooth and spreadable.

Step 10

If desired, divide the frosting into separate bowls and add food coloring to each bowl to create different colors.

Step 11

Once the cookies are completely cooled, spread a generous layer of frosting on the top of each cookie using a spoon or an offset spatula.

Step 12

Decorate the frosted cookies with sprinkles or edible decorations if desired. Allow the frosting to set for 15-20 minutes before serving.

Step 13

Store the cookies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
