  • 4 unit Egg yolks
  • 0.5 cup Granulated sugar

  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground cinnamon
  • 2 cups Ice cubes
  • 0 Optional garnish: Whipped cream
  • 0 Optional garnish: Pineapple wedge
  • 0 Optional garnish: Ground nutmeg or cinnamon

Directions

Step 1

In a medium saucepan, combine the coconut milk and whole milk. Heat over medium-low heat until warm but not boiling, stirring occasionally.

Step 2

In a separate mixing bowl, whisk together the egg yolks and sugar until the mixture is pale and creamy.

Step 3

Slowly temper the egg yolk mixture by gradually adding about 1/2 cup of the warm milk mixture while whisking constantly. Once combined, pour the tempered egg mixture back into the saucepan with the remaining milk.

Cook the mixture over medium-low heat, stirring constantly, until it thickens slightly and coats the back of a spoon. Do not let it boil. This should take about 5-7 minutes.

Step 5

Remove the saucepan from heat and stir in the vanilla extract, ground nutmeg, and ground cinnamon. Let the mixture cool to room temperature, then refrigerate until chilled (about 1-2 hours).

Step 6

In a blender, combine the chilled nog base, pineapple chunks, heavy cream, and ice cubes. Blend until smooth and frothy.

Step 7

Pour the Frost Pineapple Nog into serving glasses.

Step 8

If desired, garnish with whipped cream, a pineapple wedge, and a sprinkle of nutmeg or cinnamon for a festive presentation.

Step 9

Serve immediately and enjoy the tropical holiday vibes!
