Directions

Step 1

Start by preparing the fresh tomatoes: score an 'X' on the bottom of each tomato with a sharp knife and place them in a pot of boiling water for 1 minute. Immediately transfer them to an ice water bath. Once cooled, peel off the skins and dice the tomatoes finely.
