Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 1 packet taco seasoning
  • 1 14.5 oz can diced tomatoes with green chilies (such as Rotel)
  • 1 15 oz can black beans, drained and rinsed
  • 1 cup frozen corn kernels, thawed
  • 4 cups Fritos corn chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 stalks green onions, sliced (optional for garnish)
  • 0.5 cup sour cream (optional for serving)
  • 0.25 cup chopped cilantro (optional for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

Step 2

In a large skillet over medium-high heat, cook the ground beef until browned, breaking it up with a wooden spoon as it cooks, about 5-7 minutes.

Step 3

Add the diced onion to the skillet with the cooked beef and sauté for 2-3 minutes, until the onion is softened.

Step 4

Stir in the taco seasoning, diced tomatoes with green chilies, black beans, and corn. Allow the mixture to simmer for 5-7 minutes, stirring occasionally to combine the flavors.

Step 5

Spread 2 cups of Fritos corn chips evenly across the bottom of the prepared baking dish.

Step 6

Pour the beef mixture over the layer of Fritos and spread it out evenly.

Step 7

Sprinkle 1.5 cups of shredded cheddar cheese and 1 cup of shredded Monterey Jack cheese on top of the beef mixture.

Step 8

Top the cheese layer with the remaining 2 cups of Fritos corn chips, spreading them evenly.

Step 9

Sprinkle the remaining 0.5 cup of cheddar cheese over the top layer of Fritos.

Step 10

Bake the casserole in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Step 11

Remove the casserole from the oven and let it cool for 5 minutes. Garnish with sliced green onions and chopped cilantro, if desired.

Step 12

Serve warm with a dollop of sour cream, if desired. Enjoy!
