Ingredients

  • 2 cups white rice
  • 4 cups water
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 4 pieces sausage links (preferably spicy)
  • 1 medium onion, chopped
  • 1 cup green peas
  • 1 medium carrot, diced
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 stalks green onions, sliced
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Cook the 2 cups of white rice with 4 cups of water according to the package instructions. Once cooked, spread it out on a baking sheet to cool or refrigerate overnight for the best results.

Step 2

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Crack the 2 large eggs into the skillet and scramble until fully cooked. Remove the eggs to a plate and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Slice the sausage links and add them to the skillet. Cook for about 5 minutes until browned and cooked through.
