Ingredients

  • 3 cups Jasmine rice (cooked and chilled)
  • 12 pieces Large prawns (peeled and deveined)

  • 2 stalks Spring onions (finely chopped)
  • 0.5 cups Frozen peas and carrots mix
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Sesame oil
  • 0.25 teaspoons White pepper
  • 0.25 teaspoons Salt

Directions

Step 1

Prepare the jasmine rice ahead of time and chill it in the refrigerator for at least 1 hour (or overnight) for better texture.

Step 2

In a small bowl, beat the eggs with a pinch of salt and set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat.

Add the prawns to the skillet and cook for 2-3 minutes until pink and opaque. Remove them from the pan and set aside.
