Ingredients

  • 3 cups Mashed potatoes
  • 0.5 cup All-purpose flour
  • 0.5 cup Shredded cheddar cheese
  • 2 tablespoons Scallions (chopped)
  • 1 large Egg
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Breadcrumbs
  • 0.5 cup Vegetable oil

Directions

Step 1

In a large mixing bowl, combine mashed potatoes, flour, shredded cheddar cheese, chopped scallions, egg, salt, and black pepper. Mix until the ingredients are well incorporated and form a thick, sticky dough.

Using clean hands or an ice cream scoop, take about 2 tablespoons of the mashed potato mixture and shape it into a small patty about 2-3 inches in diameter. Repeat with the remaining mixture until all patties are formed.
