Ingredients

  • 4 pieces large tomatoes
  • 4 pieces eggs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried oregano
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice off the tops of the tomatoes and set them aside. Use a spoon to carefully hollow out the insides of each tomato, removing the seeds and pulp. Be careful not to puncture the exterior.

Pat the hollowed-out tomatoes dry with a paper towel and place them in a lightly greased baking dish.

Drizzle the insides of the tomatoes with olive oil and sprinkle with a pinch of salt, black pepper, and dried oregano.

Crack one egg into each tomato, being careful not to break the yolk. Sprinkle a bit more salt and black pepper over the eggs.
