Ingredients

  • 12 pieces Baby artichokes
  • 1 piece Lemon
  • 1 cup All-purpose flour
  • 2 pieces Eggs
  • 1 cup Panko breadcrumbs
  • 0.5 cup Grated Parmesan cheese
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 2 cups Vegetable oil
  • 2 tablespoons Fresh parsley

Directions

Step 1

Fill a large bowl with cold water and add the juice of one lemon to create acidulated water.

Trim and prepare the baby artichokes by removing the tough outer leaves and cutting off the top third of the artichoke. Cut each artichoke in half lengthwise and immediately submerge them in the acidulated water to prevent browning.

In a small bowl, mix the all-purpose flour with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. In a second bowl, beat the eggs. In a third bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, and the remaining salt and pepper.
