Ingredients

  • 150 grams Unsalted butter
  • 200 grams Powdered sugar
  • 120 grams Almond meal (finely ground almonds)
  • 50 grams All-purpose flour
  • 5 large Egg whites
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Orange zest
  • 0.25 teaspoon Salt
  • 2 tablespoons Powdered sugar (for garnish)

Directions

Step 1

Preheat your oven to 190°C (375°F) and grease a 12-cup friand or muffin pan with butter or non-stick spray.

Step 2

Melt the unsalted butter in a small saucepan over medium heat. Continue to cook the butter until it turns golden brown and develops a nutty aroma, about 3-4 minutes. Be careful not to burn it. Remove from heat and let it cool slightly.

Step 3

In a large mixing bowl, sift together the powdered sugar and all-purpose flour. Add the almond meal and salt, and whisk to combine.

Step 4

In a separate mixing bowl, lightly whisk the egg whites until frothy but not stiff. Add the frothy egg whites to the dry ingredients along with the melted brown butter, vanilla extract, and orange zest.

Step 5

Using a spatula, gently fold the mixture until well combined. Be careful not to overmix.

Step 6

Divide the batter evenly between the prepared friand or muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the friands are golden brown and a skewer inserted into the center comes out clean.

Step 8

Allow the friands to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Step 9

Dust the cooled friands with powdered sugar before serving for an elegant finish.
