Ingredients

  • 1.5 kilograms ripe tomatoes (Roma or San Marzano preferred)
  • 4 tablespoons extra virgin olive oil
  • 4 units garlic cloves
  • 1 medium-sized white onion
  • 1 tablespoon fresh oregano leaves
  • 10 leaves fresh basil leaves
  • 0.5 teaspoon red chili flakes (optional)
  • 1.5 teaspoons kosher salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon sugar (optional, to balance acidity)

Directions

Step 1

Prepare the tomatoes by blanching: Use a sharp knife to score a small 'X' on the bottom of each tomato. Bring a pot of water to a boil, and have a bowl of ice water ready. Boil the tomatoes for 60 seconds, then transfer them to the ice water. Peel off the skins, which should slide off easily.

Step 2

Cut the peeled tomatoes into quarters, remove the seeds, and dice the flesh into small pieces. Set aside.

Step 3

Finely chop the garlic and onion. Set them aside for sautéing.

Step 4

In a large skillet or saucepan, heat the extra virgin olive oil over medium heat.

Step 5

Add the chopped onion and sauté for 3-5 minutes until soft and translucent.

Step 6

Add the garlic and, if using, the red chili flakes. Cook for 1 minute, stirring constantly to prevent burning.

Step 7

Add the diced tomatoes to the skillet. Stir well to combine with the onion and garlic mixture.

Step 8

Season the sauce with kosher salt, black pepper, and sugar (if needed to balance the acidity). Stir to distribute the seasonings evenly.

Step 9

Turn the heat to low, cover the skillet partially with a lid, and let the sauce simmer gently for 25-30 minutes. Stir occasionally to prevent sticking.

Step 10

Toward the last 5 minutes of cooking, add the fresh oregano and torn basil leaves to the sauce. Stir to combine and let the aromatics infuse the sauce.

Step 11

Taste the sauce and adjust seasoning if necessary. If you prefer a smoother texture, you can blend the sauce using an immersion blender or food processor. Otherwise, leave it chunky for a rustic style.

Step 12

Serve immediately over your favorite pasta, use as a pizza sauce, or cool and store in the refrigerator for up to 5 days.
