Ingredients

  • 4 large ripe tomatoes
  • 1 teaspoon salt
  • 1 9-inch pre-made pie crust
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 cup mayonnaise
  • 10 large leaves fresh basil leaves
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Slice the tomatoes into 1/4-inch thick rounds. Place the slices on a paper towel-lined baking sheet, sprinkle with 1 teaspoon of salt, and let them sit for 20 minutes to draw out excess moisture. Pat dry with paper towels.

While the tomatoes are draining, fit the pre-made pie crust into a 9-inch pie dish and flute the edges if desired. Prick the bottom with a fork and bake for 10 minutes. Remove from the oven and let it cool slightly.
