Ingredients

  • 3 large eggs
  • 2 tablespoons milk
  • 1 tablespoon unsalted butter
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 0.5 cup baby spinach, chopped
  • 4 pieces cherry tomatoes, halved
  • 2 tablespoons shredded cheese (optional)

Directions

Step 1

Crack the eggs into a medium-sized bowl. Add the milk, salt, and black pepper. Whisk well until fully combined and slightly frothy.

Step 2

Prepare your herbs and vegetables by finely chopping the parsley, chives, and baby spinach. Halve the cherry tomatoes.

Step 3

Place a non-stick skillet over medium heat and add the butter. Swirl the pan to coat the bottom evenly as the butter melts.

Step 4

Once the butter is melted and slightly bubbly, pour in the egg mixture and let it set for about 30 seconds without stirring.

Step 5

Scatter the chopped spinach and cherry tomatoes evenly over the surface of the eggs. Sprinkle with parsley, chives, and shredded cheese if using.

Step 6

Using a spatula, gently lift the edges of the omelette to allow any uncooked egg to flow underneath. Tilt the pan if necessary to help the egg cook evenly.

Step 7

When the surface of the omelette is mostly set but still slightly glossy, carefully fold one side over the other to create a half-moon shape.

Step 8

Cook for an additional 30 seconds, then slide the omelette onto a plate. Garnish with extra parsley or chives if desired, and serve immediately.
