Ingredients

  • 10 medium ripe Roma tomatoes
  • 3 tablespoons olive oil
  • 1 medium yellow onion
  • 4 small garlic cloves
  • 8 leaves fresh basil leaves
  • 1.5 teaspoons sea salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons optional red pepper flakes
  • 1 teaspoon sugar (optional)

Directions

Step 1

Bring a large pot of water to a boil. While waiting, prepare an ice bath in a large bowl.

Step 2

Using a sharp knife, score a small 'X' on the bottom of each Roma tomato.

Step 3

Once the water boils, carefully submerge the tomatoes for 30 seconds to 1 minute, or until the skins start to peel away.

Step 4

Transfer the tomatoes immediately into the ice bath to cool. Once cooled, peel off the skins and chop the tomatoes into small cubes.

Step 5

Heat olive oil in a large saucepan over medium heat.

Step 6

Dice the yellow onion finely and sauté in the olive oil until translucent, about 5 minutes.

Step 7

Mince the garlic cloves and add to the pan, cooking for an additional minute until fragrant.

Step 8

Add the chopped tomatoes to the pan, stirring to combine with the onion and garlic mixture.

Step 9

Add sea salt, black pepper, and red pepper flakes (if using). Stir well.

Step 10

Simmer the sauce on low heat for 20 minutes, stirring occasionally to prevent sticking. Adjust seasoning to taste and add sugar if the tomatoes are too acidic.

Step 11

Tear the fresh basil leaves and stir them into the sauce in the final 2 minutes of cooking.

Step 12

Remove from heat and let the sauce cool slightly before serving over pasta, pizza, or as desired.
