Ingredients

  • 450 grams fresh salmon fillets
  • 100 grams bread crumbs
  • 3 stalks green onions, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon lime zest
  • 2 tablespoons lime juice
  • 1 large egg
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 3 tablespoons vegetable oil (for frying)

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

Place the fresh salmon fillets on a baking sheet lined with parchment paper and bake for 12-15 minutes until cooked through. Allow to cool slightly before flaking the salmon with a fork into a large mixing bowl.

Step 3

Add the bread crumbs, chopped green onions, fresh cilantro, lime zest, lime juice, egg, mayonnaise, Dijon mustard, salt, and black pepper to the bowl with the flaked salmon. Mix everything thoroughly until well combined.

Step 4

Using your hands, shape the mixture into 8 evenly sized patties about 2 cm thick. Place them on a plate and cover with plastic wrap. Refrigerate for 15-20 minutes to help them firm up.

Step 5

Heat the vegetable oil in a large non-stick skillet over medium heat. Fry the salmon cakes in batches for about 3-4 minutes per side, or until golden brown and heated through.

Step 6

Transfer the cooked salmon cakes to a plate lined with paper towels to drain any excess oil.

Step 7

Serve the fresh salmon and lime cakes warm with your choice of tartar sauce, a fresh green salad, or a lime wedge for garnish. Enjoy!
