Ingredients

  • 12 pieces Rice paper sheets
  • 12 pieces Cooked shrimp
  • 100 grams Rice vermicelli noodles
  • 1 medium Carrot, julienned
  • 1 medium Cucumber, julienned
  • 20 grams Fresh mint leaves
  • 20 grams Fresh cilantro
  • 6 leaves Leafy lettuce
  • 100 ml Hoisin sauce
  • 30 grams Crushed peanuts

Directions

Step 1

Prepare the rice vermicelli noodles according to package instructions, usually by soaking them in hot water for 3-5 minutes until tender, then draining and setting aside.

Step 2

Fill a shallow dish or pie plate with warm water. This will be used to soak the rice paper sheets.

Step 3

Working one at a time, dip a rice paper sheet into the warm water for about 10-15 seconds, until pliable but not overly soft. Carefully transfer to a clean, damp tea towel or surface.

Arrange a piece of lettuce on the lower third of the rice paper. Place 2 pieces of shrimp along the center, followed by a small handful of the prepared rice noodles, a few strips of carrot and cucumber, fresh mint leaves, and cilantro.
