Ingredients

  • 1 whole (medium, ripe) pineapple
  • 1 large cucumber
  • 1 medium red bell pepper
  • 0.5 small red onion
  • 0.5 cup (chopped) fresh cilantro
  • 2 medium (zested and juiced) lime
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 small (optional, seeded and finely chopped) jalapeño

Directions

Step 1

Cut off the top and bottom of the pineapple. Stand it upright and slice off the outer skin, removing any remaining eyes. Cut the pineapple into quarters lengthwise, remove the core, and dice the flesh into bite-sized pieces. Transfer to a large salad bowl.
