Ingredients

  • 300 g Lotus root
  • 2 tbsp Rice vinegar
  • 1 small Cucumber
  • 1 small Carrot
  • 1 Red chili
  • 1 tbsp Sesame oil
  • 1 tbsp Soy sauce
  • 1 tsp Honey
  • 1 tbsp Toasted sesame seeds
  • 1 tsp Salt
  • 500 ml Ice water

Directions

Step 1

Peel the lotus root and slice it into thin rounds, about 2-3 mm thick.

Step 2

Prepare a bowl of water mixed with 500 ml of ice water and 1 teaspoon of salt. Soak the lotus root slices to prevent discoloration and maintain crispness.

Step 3

Bring a medium pot of water to a boil. Drain the lotus root from the soaking water and blanch the slices in boiling water for 2 minutes. Immediately transfer the blanched slices to an ice bath to cool. Drain and pat dry.
